From national pigs, are chosen only parts that exceed 5 cm in height, leaving the lean part to give a note of flavour and colour. It comes in a square and flat shape, with aromatic herbs on the surface. It has a typical flavour, round slightly spicy. Suitable for condiments or toppings of gourmet dishes.
