Prosciutto cotto del Guerriero

The Guerriero’s cooked ham is a delicate taste product, obtained from the deboned thigh, that is salted, aromatize and then cooked. After the manual debone the thigh is submitted to a light brine, introducing the right quantity of salt and aromas. Later occur the massaging and the moulding through specific moulds.  At the end the product is cooked, the most difficult process. Milk derivatives and gluten sources are not used to maintain a great genuineness.
