Porchetta alla romana

The porchetta alla romana has a strong and typical fragrance. It comes from national porks, manually deboned, to which is added salt, pepper, aromas and natural spices. The rolled-up middle is slowly cooked for 10-12 hours in a stem oven. At the end they are cooled down in the blast, reaching a temperature of 2°C, to guarantee the healthiness.
